This is a party-sized prepared mix that is bursting full of tastes associated with Christmas time, rendering it perfect for a celebration. Any leftover citrus syrup for breakfast cocktails, puddings, or for another batch of bikinis.
Bikini
Makes enough for 10 servings
For the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Place the listed items inside a saucepan, heat until it reaches a gentle boil, stirring to dissolve. Then, turn off the stove allowing it to cool completely. Decant into an sterilised bottle, close it and refrigerate it in the refrigerator, where it will keep for about a month.
For the Batch Mix: Pour the specified liquid ingredients in a big jug, allow it to infuse for 60 minutes, then strain , ideally through a fine cloth, making it perfectly clear.
To serve: Pour 85ml of the batch mix into your stirring glass packed with ice, gently stirring carefully for one minute to cool it down. Pour into an chilled martini glass or equivalent, garnish with a few cranberries and complete it with a light spray of mandarin oil over the top.
